Martha Mondays – Healthy Macaroni and Cheese

 

This week’s project of Healthy Macaroni and Cheese was chosen by Robyn.  My mum was skeptical about this one due to the addition of butternut squash of which she is still getting used to eating.  But I was keen.  Anything to try and be more healthy!

I made this for dinner on Saturday.  It was easy to make, although my squash took a lot less than 20 minutes to make so sat on the counter whilst the macaroni cooked. 

I didn’t have any parmesan cheese so I used some extra cheddar for the topping.  Our verdict was that it was a bit dry.  I took to dolloping some ketchup on mine and swirling in some butter (two things that I always reach for when something needs some oomph (or chilli sauce)) but neither helped.  I ate quite a bit of it, but mum didn’t.  We both agreed however, that this would probably be ideal for getting an extra vegetable inside a child without them knowing.

  1. I’m bummed Mum didnt care for it. My family liked it and my teen daughter came back for seconds. But I LOVE butternut so I was excited to try it. Yours looks wonderful!

    Lyndsey – I am trying so hard to make the photos look better, and recently purchased some ‘props’ white plates make everything look so bland. So thank you for noticing the photo.

    Brette – I will put ketchup on most things – last night I had spaghetti with ricotta and ketchup – although that wasn’t so great!

    Hi Megan, Firstly, I love WordPress, I can see stats which I couldn’t on Blogger, its easier to organise posts, everything about it I love. Just need to get a decent header! I’m always very envious of your blog!

  3. Yours looks great! I’m planning on making it tomorrow night. I might “market” it to the kids as a “squash pasta casserole” instead of macaroni and cheese. It might go over better that way instead of a healthy version of a beloved favorite.
