Daring Bakers – Swiss Swirl Ice Cream Cake

The July 2010 Daring Bakers’ Challenge was hosted by Sunita of Sunita’s World – Life and Food.  Sunita challenged everyone to make an ice-cream filled Swiss roll that’s then used to make bombe with hot fudge.  Her recipe is based on an ice cream cake recipe from Taste of Home.

This was a good challenge.  There is little baking to be done, but as I had never made Swiss Roll before it was a good experience. 

We were supposed to make a chocolate Swiss roll with a vanilla ice cream and a chocolate ice cream and hot fudge sauce.  I made a raspberry flavoured Swiss roll filled with pink raspberry flavour cream, a vanilla ice cream and a blackcurrant ice cream and raspberry sorbet.  With blackcurrants recently being picked and a dad who detests chocolate, I thought this was the ideal time to mix things up a bit and do something that we could all enjoy.  And enjoy it we did!

 Okay, so it might have been a bit sloppy, but this was wonderful.  And was scoffed so quickly that we barely had time to notice the vanilla ice cream melting so quickly!

  2. Very, very good! The roll is gorgeous. I don’t think it’s an easy thing to roll it up, so congratulations. Choosing fruit rather than chocolate gave it a refreshing, summery touch. Luscious.
