Apricot Chiffon Pie

The first thing I did as I started to feel better was bake.  In fact I planned what I wanted to cook when I was sick and I think this spurred me on to get better.  (Thank you for your good wishes).

The recipe is from Martha (of course) and can be found here.  I changed the biscuit base and used ground almonds instead of the pistashios.   I also found that my mixture did not set at the end before filling the biscuit base so I left it in the fridge for 10 minutes and then it was perfect.  The filling wasn’t as orange as Martha’s and had quite a subtle taste, but with the apricot puree on top (which I could sit in a bath of!) it worked a treat.

 

It tastes great.  Whilst it does take up a lot of bowls, we found that it was worth the washing up!
