It’s Martha Mondays day today and it was my pick this week. So I chose this.
You know, at the beginning of a new month I get all my Martha Stewart Living magazines out and look through them. I have six January issues and this came from the ‘Spa Cuisine’ section of the January 2007 issue.
Simple: wholewheat spaghetti, lemon, onion, rocket, pistachios and olive oil
I fancied cooking something more healthy and something that I could make when I get in from work. This ticked both of those boxes. We never eat wholewheat pasta at home but we actually liked it very much and couldn’t really tell the difference.
Now this is a strange recipe and I found that my food processor was a bit big to get the pistachios and lemon to finally chop, in the end I put the lemon and pistachio mix back into the food processor to give it another whirl whilst I added the olive oil.
The verdict? We liked this. Alot. Mum wolfed hers down and I quickly followed. I think this might be work in progress as I would like the pesto to be a bit runnier and I might put some parmesan on top next time.

First of all, I love the idea of keeping all the magazines for a month together and then getting them out at the beginning of the month to look through them. Genius. I liked this too. It was better with cheese! I did ok with the food processor – you were supposed to add the oil in there I thought and it all chopped up pretty well.
I find it really inspiring to look back and get ideas, I love the older magazines the best. I’m so pleased you liked this, will add Parmesan next time. It had good reviews on the website too.

Oh it looks so good! All the ingredients I lke!!! I am still at the “mush eating stage” but I can’t wait for next week whem I can start sampling real foods. I think I will have some whole wheat pasta for sure. I miss it so much. Happy you liked it so much!!!

Pru we loved this dish. I did end up putting some grated parmesan cheese on mine, but everyone else was fine without. I saved enough for lunch tomorrow. I think it might even be good cold. It was easy to make and very fresh tasting simplicity at it’s best! Great choice.
I finally got around to making this and posting about it. I liked this but my kids had other ideas. Thanks for inviting us to try something new and interesting!
